- 375g butter at room temperature
- 675g 4 1 2 cups icing sugar mixture
- 60 ml 1 4 cup milk
- 5 to 6 drops of blue liquid food coloring
The Instruction of mermaid cake recipe
- 1 cake iced to the top on a round cake board or serving dish top with another cake iced side press lightly to flatten slightly top with 1 more cake iced to the bottom to form 3 layers press lightly to flatten slightly
- lightly dust a clean and dry surface with icing sugar reserve 100g sweet cherry knead the rest into a ball divide the frosting into 3 parts tint each part a little different shade of blue with food coloring kneading in the coloring until well blended

- use a serrated knife to cut the top of the remaining cake to remove the glaze throw the frosting use the template as a guide to cut a tail of mermaid cake cover the tail with the rest of blue butter cream sprinkle the top of the tail with the blue sugar to cover and use the back of the spoon to press lightly to secure place in refrigerator for 10 minutes
