  • 3 cups 750ml massel vegetable liquid stock
  • 2 carrots peeled roughly chopped
  • 1 2 cup dried brown lentils
  • 1 cup fresh continental parsley leaves roughly torn
  • cooked barley to serve

  • season lamb with salt and pepper heat olive oil in a large heavy based saucepan over a moderately high heat cook lamb for 5 mins or until just beginning to brown add onion garlic and celeriac and cook for another 3 mins add lemon rind rosemary and vegetable stock cover and simmer for 30 mins
  • remove lid and simmer for 15 mins add carrot and brown lentils and cook stirring occasionally for 15 mins or until the lentils are just cooked add parsley and serve with cooked barley
