The ingredient of Lamb Spinach And Potato Curry

  • 2 tablespoon vegetable oil
  • 2 onions chopped
  • 6 cloves garlic chopped
  • 2cm ginger piece finely chopped
  • 400g can chopped tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 4 teaspoon dried chilli flakes
  • 900g coles brand lamb diced
  • 3 potatoes peeled cubed
  • 150g baby spinach
  • 1 long green chilli chopped plus extra to serve

The Instruction of lamb spinach and potato curry

  • heat 1 tablespoon oil in a large pan on medium cook onion for 5 mins until soft remove from heat add garlic and ginger stir to combine and set aside to cool place cooled onion mixture in a blender with tomato spices and 1 cup of water blend until smooth
  • heat remaining oil in same pan on high heat cook lamb in batches stirring for 5 mins until brown add tomato mixture and stir to combine bring to boil reduce heat to low simmer covered for 1 hour until lamb is very tender add potato and cook for 15 mins until tender
  • meanwhile place 100g of spinach in a colander pour over boiling water to wilt spinach drain place in a small food processor with chilli and puree until smooth
  • add remaining spinach leaves to lamb stir until slightly wilted serve lamb curry with spinach puree and extra green chilli if using
  • heat the naan following packet directions thin the yoghurt with a little water and drizzle over the potato mixture top with coriander and serve with naan
